Homemade Pizza Dough


1 pkg. of Active Dry Yeast
1 c. Warm water (115 degrees)
1 1/2 c. Whole Wheat Flour
2 tsp. Granulated sugar
1/2 tsp. Salt
2 Tbsp. Olive Oil
1 1/2 c. White Flour

Dissolve yeast in warm water. Allow to rest 5 minutes. Add all other ingredients except last cup of white flour. Add water mixture to dry mixture. Knead remaining flour into dough for 5 minutes. (The dough will be smooth and elastic).
Cover pizza dough and allow to rise in a warm draft free place till doubled (about an hour). Spray one 14 inch pizza pan or two 10 inch pizza pans. (I put mine on a cookie sheet that has sides, it fills the pan nicely) Stretch pizza to fit. Top with desired toppings.
Preheat oven to 425 degrees. Bake until cheese is melted and crust browned (roughly 10 minutes). Enjoy!

Salsa Sorte


The best dip ever!


1 can black beans
1 can black eyed peas
1 can yellow corn
1 can white corn
Drain each can and pour contents into a large bowl.

Chop:
6-7 green onions
1 bunch cilantro
3 avocados
2 tomatoes

Prepare 1 package of "Good Seasons" Italian dressing.

Combine all ingredients in your large bowl and let sit in the refrigerator for at least 1 hour before eating.

White Chili


1 lb. chicken, raw, diced
1 med onion, chopped
1 tsp. oil
1 1/2 tsp. garlic powder
1 tsp. salt
1 tsp. cumin
1/2 tsp. pepper
1 tsp. oregano
2 cans white beans (great northern) drained
1 can chicken broth
2 4oz. cans diced green chilies
1 cup sour cream
1/2 c whipping cream


Saute chicken in garlic powder, onions, and oil. Add beans, chilies, chicken broth, and seasonings. Bring to a boil. Reduce heat, simmer uncovered for 30 min. Remove from heat. Stir in creams.
Serve with olives, shredded cheddar cheese, and tortilla chips.

Eileen's oatmeal fudge bars


Got this from a girl in Kevin's class- love her!

1 pkg. (16 oz) golden pancake mix
2c quick cooking oats
1/2 c packed brown sugar
1/3 c butter (softened)
2 eggs
1 pkg (6 oz) semisweet chocolate chips
1/2 c sweetened condensed milk
2 tbsp. butter
1/2 c chopped nuts

Heat oven to 350
Mix: pancake mix, oats, brown sugar, 1/3 c butter, eggs.
Heat: choc. chips, milk, and 2 tbsp. butter over low heat. Stir constantly until chocolate is melted & smooth.
Spread 2/3 cake mix in ungreased pan (9x13)
Spread w chocolate mixture. Drop remaining cake mix by spoon onto chocolate mixture. Sprinkle w/ nuts. Bake until light brown ~30 minutes.
makes 24 bars!

Chicken Enchiladas


16 oz sour cream
1 can cream of chicken soup
4 oz. can diced green chilies
1/2 small can diced black olives
1 bunch green onions, chopped
3 chicken breasts
1 pkg. flour tortillas
1 1/2 c. grated cheddar cheese


Mix sour cream, soup, chilies,black olives, green onions, and 1 cup cheddar cheese. boil chicken breasts until tender; cool, then slice chicken into bite sized chunks. Set aside 3/4 cup of the sauce mixture. add the chicken chunks to the remaining sauce mix. Spoon 2 to 3 tbsp of chicken sauce mixture onto a flour tortilla and roll up. Place tortillas in a 9x13 inch casserole pan (Spray with cooking spray first) After filling all tortillas and lining them up in the pan, take the set-aside sauce and sread over the tops of the tortillas, then sprinkle the remaining 1/2 c cheddar cheese on top. bake at 350 for 25 to 30 minutes.

Chicken Roll-ups



4 boneless skinless chicken breasts


1 8-oz. cream cheese


1/4 c. melted butter


1 roll/can crescent roll dough


1/2 c. bread crumbs
Bake chicken breasts at 350*/ 20 min.Shred Chicken and mix with cream cheese (celery/cashews optional)Unroll two triangles of dough- (so one rectanlge) Put mixture in crescent roll dough and form a ball. Roll ball in melted butter and then bread crumbs. Continue until all dough is used. Makes 4 ballsBake at 350* for 20-30 min.
Serve over rice.


Gravy:


1 can cream of chicken soup


4 tbsp. sour cream


1/2 c. milk

Pumpkin Chocolate Chip Cookies THE BEST!!!!


1 c. pumpkin

3/4 c. sugar

1/2 c. oil1 egg

2 c. flour

2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. salt

1 tsp. baking soda

1 tsp. milk

1 c. chocolate chips

1 tsp. vanilla

Nuts (optional)


Dissolve baking soda in milk; set aside. In large bowl add pumpkin, sugar, oil, and egg; stir. Add flour, baking powder, cinnamon, salt and baking soda mixture. Mix well. Stir in chocolate chips and vanilla. Spoon onto cookie sheet. Bake at 375 degrees 10 to 12 minutes or until done.

Cowgirl Cookies (Oatmeal Choc Chip M&M Cookies) from Bakerella


Cowgirl Cookies
1 1/3 cup all purpose flour, spooned into measuring cup & leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 - 1/2 cup chopped pecans

Stir all the dry ingredients in a large mixing bowl

Add1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla

Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.

Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven. I got about 26-28 cookies out of these.

Easy italian chicken










Easy Italian Chicken



8 oz. cream cheese


1 stick of butter


2 cans cream of chicken soup


1 pkg. Good Seasons Italian Dressing mix


8-10 chicken tenderloins or 4 chicken breasts
Mix first 4 ingredients in blender. Layer chicken and sauce in crockpot. Turn on low heat and cook for about 6 hours.



Serve over rice or pasta.
